Discovered this today. Disney always does it right. This book isn’t just your run of the mill book on manners. No. This book will teach you ELEGANT manners! And seriously, the world today could sure use more elegance. Here are my favorites.

It’s not always about food. Sometimes I feel crafty, so today I made bottle cap bows. I think they turned out pretty cute. They are also super easy to make all you need is a glue gun, ribbon, a hair clip, and of course a bottle cap.

Breakfast at Stacks Pancakes @ Dana Point, CA

We had the Blueberry Waffle (No picture as it was nothing special, a waffle with blueberries and whip cream same as everywhere else), S’Mores French Toast, and the Spicy Chicken and Bacon Waffle.

S’mores Waffle: This was pretty tasty and not as sweet as you would think. The bread was rolled in graham cracker crumbs which gave it an interesting texture but just shy of being crunchy, which is too bad. The only complaint would be the portion size was on the smaller side and my daughter was still quite hungry after finishing it. Fun to try but would probably not order it again though.

Spicy Chicken and Bacon Waffle: Now this was a pretty unique item that had a lot going on. It was a waffle with a chicken breast deep fried Katsu style with just the right amount of spicy heat (The Chicken breast was huge it covered the entire waffle). This was then topped with a few thick slices of bacon. Then this was covered with cheese and sriracha mayo (the spicy mayo not only added just a little more heat it added a unique creaminess, though my husband found the mayo off putting I quite liked it.) the whole waffle was then probably put under a salamander for a couple seconds to melt the cheese and kind of cooked the mayo which gave it the consistency that you would get when they do the baked sushi rolls with spicy mayo. To finish it off, the whole shebang was then drizzled with maple syrup and powdered sugar! I really enjoyed this dish it had sweet, spicy, salty, and creamy. The only problem would be that about 15-20 min. after eating it boy did it sit heavy in the gut, after eating such a heavy meal my body was practically crying for something light and fresh like fruit or a salad.

Individual Chicken Pot Pies:
1 lb. Chicken Breast1 Can Cream of Chicken SoupCeleryCarrotsPaprikaThymeSalt and PepperButterGarlicPre-Made Pie crustMethod: In a saute pan melt approx. 2 tblsp butter and then add minced garlic about 1/2 tblsp. Salt, pepper, paprika, and thyme your chicken then add to pan once garlic becomes fragrant. Once chicken is almost cooked break/cut into smaller bite-sized chunks. Add chopped carrots and celery (you decide how vegetabily you want it). Once Chicken is cooked add 1 can of cream of chicken soup with 3/4 can of water. Stir around till everything is combined. Place chicken mixture in ramekins then top with pre-made pie crust (remember to put slits in the crust to vent). Bake in the oven at whatever heat the pie crust needs to be cooked at. Bake till crust is golden brown then brush with melted butter then Enjoy!

German Potato Salad
This is my Dad’s recipe. It’s delicious! Cook red potatoes until just tender. Fry about 1 /2 lb bacon, remove to a plate. Discard all but about 1/4 cup of the bacon drippings. Add 1 chopped onion and 2 chopped celery stalks to the bacon drippings and cook until transluscent. Add 2 tblsp flour to the onion and bacon fat. Cook for a minute. Add 1/2 cup water to the pan and stir until thickened, then add 1/4 to 1/2 c. sugar.  Season with salt and pepper. Stir until bubbly. Now the dressing should be terribly sweet, so add about 1/4 to 1/2 cup vinegar to balance the sweet, sour. “Make sure to season with salt and pepper, without salt you won’t be able to taste the sweet or the sour.” That’s what my Dad always says! Slice your potatoes, toss with the bacony dressing, top with fresh chopped parsley and crumbled cooked bacon, or, if you’re like me,  what’s left of it that you didn’t snack on. Enjoy!!
