Egg Muffins: They didn’t turn out super pretty but they taste quite good and where incredibly simple to make. Essentially all the ingredients you would like in an omelet poured into a muffin tin then baked at 350 degree oven til the fork comes out clean (about 10-15min.) Figure about 10-12 eggs to make a dozen muffins. Mine have spinach, red pepper, pablano pepper, leek, ham, and just a small pinch of cheese. I made these for breakfast on the go since I am often running late and eating breakfast in the car.
